Crispy Potato Taco Bowls

To start this meal I started by preparing my potatoes and preheating my oven to 350-400 degrees. Cut your potatoes into small bit size pieces and cover in oil, salt, pepper, paprika and a little taco seasoning. Feel free to adjust the seasoning to your liking. Once you have seasoned your potatoes put them in the oven around 350-400 degrees for around 20 minutes and make sure you flip them around half way through. They are done when you have found them crispy enough and they are fork tender.

Next start on your ground beef. Add your ground beef to a pan and when it is no longer pink add your seasoning of choice. I used salt pepper and taco seasoning. I also added some water to mix the seasoning better and make it slightly more saucy.

While your potatoes and ground beef are cooking, prepare your vegetables.

Cut lettuce and grate your cheese and carrots. If I had corn I would have added this.

To assemble, take your potatoes, ground beef, lettuce, cheese and carrots and add them to the bowl. Top with salsa and any other ingredients of your choice and enjoy!

Overall this was an easy dinner to make and was well balanced while also being a comfort meal for me. It reheated great as leftovers. I just wish that my potatoes had been a little crispier. Next time I’ll try cooking them at a higher temperature with a little more oil because they stuck to my pan this past time.
