Random Fridge Meals

For this week’s free inquiry I didn’t have a chance to make a meal prep. It was reading break and I was home not cooking and then I had a week where I only bought the basics for cooking and couldn’t think of a meal. So this week’s post is going to be a group of a couple mini recipes that I made with my fridge basics. 

Caprese Tulips

My first recipe was one that my mom and I made for valentines day while I was home. These were caprese tulips. 

Ingredients

  • Tomatos
  • Bocconcini cheese balls
  • Basil leaves
  • Balsamic glaze

To make these start by taking a tomato and sitting it up. Take your knife and slice the tomato from the top most of the way down. Now do the same in a cross pattern to quarter the top. Remember not to cut it all the way through.

Once you’ve cut your tomatoes grab a bocconcini cheese ball and add it into the centre of your cut tomato. Be careful not to break the tomato in half while doing this.

Next add a basil leaf to your skewer and then stick your tomato and cheese on the skewer as well.

Once all your caprese tulips are assembled, drizzle with balsamic glaze and enjoy!

Rotisserie chicken quick dinners

This week I bought minimal groceries and challenged myself to make as many easy meals as possible with the little food I had. Using some pantry and grocery basics (that can be adapted based on what you have) I was able to make 5 meals from 1 rotisserie chicken. Enjoy my week of quick easy meals from minimal groceries!

This meal took me around 20 minutes and was by far the longest one of the week. This wasn’t a meal prep but having the rotisserie chicken allowed for me to have easy meals all week.

For my first meal I bought a rotisserie chicken, spinach and scalloped potatoes from the grocery store. These were premade scalloped potatoes and when I got home I put them in the oven for 20 minutes until they were warm. 

While they were cooking I took all the meat off the bone of my rotisserie chicken and pulled the chicken that I wasn’t planning on eating that night. 

To make my spinach, I put a small amount of water in my pot and brought it almost to a boil. I then placed many handfuls of spinach into my pot and let it steam until it had wilted. I drained the water, put butter and salt on it and it was ready to eat.

This takes about 5-10 minutes and the timing worked out well with when I took my potatoes out. 

This made me enough food for two dinners of potatoes, chicken and spinach.

Chicken caesar salad.

For my first easy meal prep I made a chicken caesar salad. 

I started by cutting my lettuce. I wash all my lettuce so when I want to use it, it is washed and ready to go. I used my store bought caesar salad sauce and put my pulled rotisserie chicken on top for some protein. This was a great and easy lunch. It was delicious and healthy while ensuring I had protein as well as vegetables.

Chicken tacos

My last meal prep food was chicken tacos. I used the pulled chicken and heated it with the sauce and seasoning of your choice. I then topped it with grated cheese, lettuce and salsa. These are the ingredients that were in my fridge but feel free to add more topping according to your liking. 

Overall this meal took me around 5 minutes to assemble and minimal dishes. It was delicious, well balanced and gave me enough food for 2 meals.
